Job Description

Under the direction of the University Catering management team, lead, direct and assist employees in achieving excellence in customer satisfaction, food quality, service of food, employee efficiency and productivity, compliance with safety and sanitation standards, HACCP standards, Indiana Food Service Code regulations, and rules, policies and procedures of Ball State University. Additional functions include but are not limited to subordinate training, communication, executing detailed plans and arrangements, and participating in the service of food.

Job Function:

Minimum Education:

1. High School diploma or equivalent (GED).

Minimum Experience:

1. Two (2) years of direct or related work experience in catering.
2. Must be able to read and comprehend all specified policies and procedures.
3.You must be 18 years or older.

Duties and Responsibilities:

  • Lead, direct, and assist employees in the set up, service and tear down of events including but not limited to: Communicating with banquet servers and bar service personnel as to final updated contract provisions, making oral task assignments, giving directions, overseeing buffet set up and tear down, table setting and bar set up for correctness, timeliness, greeting and meeting client chairperson, overseeing proper transporting of food and equipment including loading and unloading, overseeing and participating in proper sanitation and safety as defined by BSU manuals, handbooks, HACCP standards, Indiana Food Code, NRA ServSafe, and other industry standards. Requires excellent organization and communication skills as well as the ability to work at rapid speed and to give the client an exceptional catering experience that exceeds their expectations.
  • Orient, coach, and train employees resulting in well-trained staff that will consistently exhibit excellence in job knowledge and performance; ensure employees are well-trained before working in any job assignment; and provide accurate, balanced feedback to employees regarding job performance.
  • Assist in overseeing and maintaining adequate staffing following University procedures to schedule employees; complete documentation related to scheduling; maintain confidentiality and ethical practices relating to communications regarding scheduling of employees.
  • Scrutinize inventory levels, and other indicators; manage purchasing assignment and follow policy and procedures of Ball State University; maintain appropriate levels of foods and supplies as assigned, with neither being over or under-stocked; complete weekly inventory of foods and supplies with a high degree of accuracy.
  • Lead, direct and assist in the cleaning of the service areas including but not limited to: coffee brewing equipment, cabinetry in all locations, cabinetry and sink in pantry next to Cardinal Kitchen, plating table and service areas, service refrigerators and freezers interior and exterior, all tray jacks, beverage or service carts, clean chafers, specialty equipment, and tableware.
  • Lead, direct and assist in the planning, organizing and assembly of serving equipment and supplies in advance according to contractual specification. Place in closed mobile cupboard or load onto appropriate transport carts.
  • Unlock and secure all facilities; observe safety and security precautions to prevent personal or employee injury, and theft of university or employee property; maintain personal and departmental keys in a safe manner to prevent unauthorized use.
  • Assist in planning and executing special events and catered events. Assist in creating artistic table presentations including but limited to individual client tables and buffet tables, utilizing theme decorations, flowers, artifacts, and other decorator items resulting in cost effective, fresh, original, artistic, and tasteful event design.
  • Demonstrate a professional appearance; wear clean, well pressed clothing daily. Follow prescribed dress code guidelines.
  • Perform other duties as assigned.
